Method Putting the Pad Thai Together: Place your wok over medium-high heat. Add a tablespoon of oil plus the garlic and onions. Stir fry for about a minute to release the fragrance. Add the Bok Choy, carrots, bell peppers & broccoli and stir-fry 2 minutes until the vegetables are lightly softened and yet crisp.
SAUTE THE VEGETABLES: In the same wok, add 2-3 tsp more oil and then the shallots. Cook for 1-2 minutes until softened, then add minced garlic, the ribboned carrot, sugar snap peas and cook for 2-3 minutes. Add the tofu back to the wok along with the bean sprouts green onions and noodles.

Add in blanched noodles and fried tofu and cook for 1 to 2 minutes. Push the noodles to one side of the pan and add eggs to the empty space. Cook the eggs until lightly scrambled, then stir to combine with the noodles. Add sauce to pan and stir fry until the noodles absorb most of the liquid, about 2 minutes.
Heat the peanut oil in two pans (or in one large pan). In one pan, fry the tofu until crispy from all sides. In the other pan fry the mushrooms until golden brown. Then add the mushrooms to the tofu, glaze with the soy sauce and stir to combine until evenly coated and nicely browned.
